Shawarma. Even the name sounds appetising – and the dish, when it's well made, more than lives up to expectations. The name actually refers to the way the meat is cooked, slowly turned on a spit until it's tender enough to melt in the mouth and comes from the Turkish word çevirme which actually means "turning".
